The key ingredient to a young steak? A hashish marinade

Nobody likes sinking their teeth into a tough steak. And while you might associate cannabis-infused recipes with just getting high, a study from Sri Lanka found that the plant can also be used to soften your sirloin.

How do you use a marijuana marinade?

A study at the University of Peradeniya in Sri Lanka shows that a cannabis marinade can make your beef significantly tender, giving a mere 5.1, which is even below the sheer value of fillet steak (known as the most tender steak) 5.7 . (1)

The cannabis marinade used in the research was a filtered solution of 1 gram of cannabis boiled in 200 ml of water. It was applied topically and injected into two different beef samples, each about 1.5 inches thick, cut from the Longissimum Dorsi muscle normally used for steaks. (2) The beef was then left to stand at 4 ° C for about 4 hours. (1)

How does it work?

The solubility of collagen has been observed after marinating the steaks in cannabis marinade (1), and collagen contributes to meat toughness. (4) Although this has not been studied, the pathogens believe that the presence of natural enzymes in cannabis could explain the solubility and thereby increase the sensitivity of the beef. (5)

Prolonged marinating of beef in cannabis marinade in frozen conditions did not cause oxidation in the meat (1) due to the many antioxidant benefits of cannabis (4), which kept the meat fit for consumption. Other effective marinades like curd and vinegar caused fat oxidation and also gave the beef a dark brown color. (5)

A potential benefit for the Canadian beef industry

The cannabis marinade could save the Canadian beef industry from some losses.

It has been estimated that the inconsistencies associated with beef tenderness could cost the Canadian beef industry $ 21 million annually. Tenderness is consistently identified as the most important trait influencing beef quality and customer satisfaction. About half the carcase weight is generally underutilized and, due to its toughness, is sold as either roast or ground beef at about half the price of medium meat cuts. (3)

Although traditional technologies like aging improve the quality of beef (10), the cost of keeping the carcass at longer refrigerated temperatures can be very high. (1) Further research into the use of cannabis marinade in meat processing could open new business opportunities for cannabis growers. (5)
